Having battled a difficult relationship with food, severe asthma, and even a collapsed lung at a young age, Penny turned to fitness and nutrition to transform her wellbeing. How do you usually start your mornings, and what role does coffee or your favorite fuel play in setting the tone for your day?
Every morning I start with a workout and a big glass of water. That first burst of movement really sets my mindset for the day and helps me feel focused and energised. I’ll sometimes have a small amount of caffeine, but it’s not something I rely on. For me, combining hydration, intentional movement and a calm moment before the day begins creates the foundation I need to feel balanced and productive.
Women often juggle so many roles—career, family, self-care. How do you personally manage your energy levels to keep up with the demands of your lifestyle?
I plan my energy, not just my calendar. Morning exercise, strategic breaks, and regular hydration keep me steady. I also give myself permission to say no when I need to, it’s about protecting energy rather than stretching it until it snaps.
Mindset & Motivation: When you hit those days where motivation feels low, what’s your go-to ritual, mindset shift, or daily practice that helps you power through?
I return to small, achievable wins. A 10-minute meditation, a short walk, or journaling three things I’m grateful for can reset my focus. I remind myself that motivation doesn’t need to be monumental, it just needs momentum.
Fuel Beyond the Cup: Outside of coffee, what other habits, foods, or wellness practices do you swear by to stay energized and grounded throughout the day?
Hydration is key for me, I aim for 2–3 litres of water daily and often add electrolytes, especially on busy or active days. I keep my energy stable with nutrient-rich foods like nuts, seeds, lean proteins and plenty of leafy greens. I also take short movement breaks every couple of hours, even five minutes of stretching or a quick walk outside helps keep me grounded and maintains my energy throughout the day.
If you could share one piece of advice with women about how to fuel not just their bodies but also their ambition and spirit, what would it be?
Treat yourself as a priority, not an afterthought. Nourish your body, move in ways you enjoy, and give yourself quiet moments to think and reflect. Ambition grows when the body and mind are supported and not pushed, punished, or ignored.
